Ice Cream with Khoshaf Sauce, an Egyptian Twist.

An Egyptian dessert, khoshaf, turned into an exotic sauce for your ice cream.  It’s a crowd pleaser for all ages.


Here’s a twist on serving khoshaf.  Khoshaf is a dried fruits salad typically served in Ramadan.  Walk down your supermarket’s ice cream aisle and the choices are endless. But have you ever met anyone who wouldn’t eat vanilla ice cream?  Mix Khoshaf with vanilla ice cream and you take both of them to a whole new level of deliciousness.

Serving Ideas: The perfect ending to an elegant dinner or a snack on a hot summer day.

Condiments: Your favorite nuts such as toasted pine nuts of chopped toasted hazelnuts. Shredded Coconut. A sweet wafer for an added crunch.

Serving Size: 16

Ingredients:
Ice cream for 16 persons
1 cup  chopped dried apricots
1/2 cup chopped dried prunes
1/2 cup raisins
1 cup orange juice
1 1/4 cup water
1/4 cup sugar

Directions:
~ Over medium high heat, bring the orange juice, water and sugar to a boil in a small saucepan, mixing often.
~ Add the dried fruits and bring to a boil.  Let it simmer over medium low heat for 10 minutes
~ Your sauce is now ready.
~ In every ice cream bowl, add 2 scoops of ice cream.  Drizzle with khoshaf sauce. Add your favorite condiments (See Serving Ideas above.)

Variations:
~ You can use the same sauce as a topping for plain yogurt, a slice of yogurt cake, or a slice of pound cake .
~ You can also vary the dried fruits to your liking.  There are so many dried fruits out there.  Just make sure you cut them all in the same size and you vary the colors of the fruits you pick.
